My favourite salad at the moment. It is great for a hearty, nutritious and filling dinner ☺️
Ingredients (4 people):
- 1-2 TBSP olive oil
- 180 g smoked tofu, diced (1/2 cm)
- 2 tomatoes, diced
- 400 g butternut squash, diced
- 3-4 garlic, crushed
- salt and pepper to taste
- 1/8 TSP turmeric
- 200 g chickpeas, cooked
- 150 g spinach, chopped
- 1-2 beetroot, diced small chunks
Instructions:
1. Roast the tofu in olive oil for 7-10 minutes. Put in a bowl to cool down.
2. Heat the oil on medium heat and add the tomato, squash, garlic, turmeric, pepper, salt and some water. Let it boil for 10 minutes till tender.
3. Put the spinach, chickpeas, beetroot, tomato-squash mixture and tofu in a big bowl and mix gently.
As a sauce I use either a mashed avocado or a tahini sauce (tahini, water, lemon juice, salt, and pepper). Which one do you prefer? 🙂

Polenta PIZZA [quick and easy]
For the tomatoe sauce: sauté onions for 3-5 minutes in olive oil, add garlic, salt, and pepper. Add tomatoes and bell pepper after 1-2 minutes (garlic gets bitter if it gets dark). Let it cook for another 5-10 minutes. The longer the better 🙂 Add herbs (rosemary, thyme, basil, oregano).
