Coconut carrots soup with ginger

Ingredients (4 people):

  • coconut oil
  • 1 onion, 2 garlic, squeezed ginger
  • salt, pepper, tumeric, chilli
  • 800 g carrots
  • 2 dl coconut milk
  1. Steam the onion, garlic, ginger, turmeric and chilli in coconut oil.
  2. Prepare the carrots, cut small pieces, add them and deglaze with water. Let it boil for 15-20 mins.
  3. Mash everything. Add salt, pepper, coconut milk and more water if too thick.
