Ingredients (4 people):
- coconut oil
- 1 onion, 2 garlic, squeezed ginger
- salt, pepper, tumeric, chilli
- 800 g carrots
- 2 dl coconut milk
- Steam the onion, garlic, ginger, turmeric and chilli in coconut oil.
- Prepare the carrots, cut small pieces, add them and deglaze with water. Let it boil for 15-20 mins.
- Mash everything. Add salt, pepper, coconut milk and more water if too thick.
