Coconut Indian curry with lentils and vegetables

Ingredients (4 people):

  • coconut oil
  • 1 onion, 1 garlic, squeezed ginger
  • masala, salt, pepper
  • 600-800 g vegetables (e.g. tomatoes, broccoli, beans)
  • 200 g washed red lentils
  • 2 dl coconut milk
  • lemon juice
  1. Steam the onion, garlic, ginger and masala in coconut oil.
  2. Prepare the vegetables, cut into cubes, add them and deglaze with little water.
  3. Add lentils, salt and pepper and let it boil for 10 mins.
  4. Add coconut milk and some lemon juice.
