Ingredients (4 people):
- coconut oil
- 1 onion, 1 garlic, squeezed ginger
- masala, salt, pepper
- 600-800 g vegetables (e.g. tomatoes, broccoli, beans)
- 200 g washed red lentils
- 2 dl coconut milk
- lemon juice
- Steam the onion, garlic, ginger and masala in coconut oil.
- Prepare the vegetables, cut into cubes, add them and deglaze with little water.
- Add lentils, salt and pepper and let it boil for 10 mins.
- Add coconut milk and some lemon juice.
