Indian spinach with mushrooms and tofu

Ingredients (4 people):

  • 200 g grain (e.g. quinoa)
  • 1 TSP coconut oil
  • 1 onion, diced
  • 2 garlic, pressed
  • 1/2 cm squeezed ginger
  • masala, salt, pepper
  • 150 g mushrooms, diced
  • 400-600 g spinach
  • lemon juice
  • pine nuts, sesame
  1. Cook the quinoa in water (1:2) with a lid over low heat (5 mins) and let it soak (7 mins).
  2. Steam the onion, garlic, ginger with masala, pepper, and salt in coconut oil.
  3. Prepare the mushrooms, add them to the onion and deglaze with little water.
  4. Let it boil for 10 mins. Turn off the stove. Add the spinach and lemon juice.

Garnish: roasted pine nuts and sesame, paprika powder
Side dish: quinoa
