Mango Couscous

Couscous Mango Salat

Ingredients (4 people):

  • 200 g couscous or quinoa
  • 1 mango
  • A handful raisins, soaked in 2 TBSP warm water
  • 2 peppers (red, yellow)
  • 1 onion, 2 garlic, squeezed ginger
  • salt, pepper
  • olive oil, balsamic vinegar, lemon juice
  • some fresh peppermint leaves
  1. Add boiling water to the couscous (1:1) and let it soak for a few minutes.
  2. Prepare the fruits and vegetables, cut into cubes and add to the couscous.
  3. Add everything else, stir carefully and taste.
