Ingredients (4 people):
- 200 g couscous or quinoa
- 1 mango
- A handful raisins, soaked in 2 TBSP warm water
- 2 peppers (red, yellow)
- 1 onion, 2 garlic, squeezed ginger
- salt, pepper
- olive oil, balsamic vinegar, lemon juice
- some fresh peppermint leaves
- Add boiling water to the couscous (1:1) and let it soak for a few minutes.
- Prepare the fruits and vegetables, cut into cubes and add to the couscous.
- Add everything else, stir carefully and taste.
